The olive tree, perhaps one of the most symbolic in Israel, represents blessings, health and rootedness. An olive branch serves as the emblem of the state of Israel, and as a symbol of peace universally. The tree itself is often gnarled and twisted with silver foliage, contributing to it’s reputation of ancient wisdom. It grows wild and cultivated, producing green fruit in summer, which becomes purple-black by late autumn. Olives have been harvested for their fruit and oil as early as 4,000 BCE and were a major commodity in ancient trading.
